The temperature of the vapor is focusing on vapor itself with a certain degrees of scale of temperature. And Evaporation temperature emphasizes on how much degrees can become a substance (liquid generally) into vapor.

As for water, then I think the temperature of the water vapor may be lower(or higher) than evaporation temperature to water.

the temperature of the vapor ，请注意“the vapor”， 有一个the 在前面，就是说是蒸汽本身的温度。
evaporation temperature是指蒸发或升华的温度，就是那个点能使物质蒸发，而不是物质本身的温度。
